DIFFERENT FUELS USED IN THE KITCHENS
LPG: LIQUIFIED PETROLEUM
GAS is
the fuel used in the kitchen to fuel gas burners. This gas is supplied in
industrial cylinders or in bulk storage tanks at the hotel premises. It is
supplied through pipe lines. The LPG cylinders are stored in separate place,
usually known as Gas Bank and usually operated by the kitchen stewarding Department.
Amount of gas cylinders depends on the size of the establishment. Half of the
cylinders would be in use and the other half for back up.
LPG is liquefied under pressure
and converts into gas when the pressure is released. It is almost smokeless and
easy to handle. It should be handled with care since the gas is transparent and
not easily detectible and highly combustible.
Usage:
It is used as a fuel for cooking ranges, ovens and salamanders.
CNG: Compressed Natural
Gas is
gaining popularity for its fuel efficiency and environment friendly properties.
Usage:
It is used in eco-friendly hotels as fuels in many types of equipment such as
ovens, gas range etc
COAL: Popular kind of fuel till
today. The smoky flavour which the coal gives is much desired. Coal should
always stored from food areas, ideally in cool dark areas. Usually a separate
room is kept for storage since it is combustible and messy.
USAGE:
Used in kitchen to light Tandoor and barbeque grills.
WOOD: Famous cooking style in
Italian Cooking Classic Wood oven pizzas. It lends a good aesthetic appearance
to the restaurant where chefs prepare pizzas in front of the guest. Some time
the Oven is fired with LPG but the wood is used just to give a smoky flavour to
the pizza
Wood
chips used to smoke certain foods in a smoker.Usage: Wood fired Pizza Oven, to
prepare smoked food.
ELECTRICITY: Used to fuel many types
of equipment. Care should be taken while handling equipments with different
voltage
Usage:
Most of kitchen equipments. Easy to use electric equipment
STEAM: Many hotels use steam to
cook or operate equipment. Usage: Steam is used for equipments such as
dishwashers and steam jacketed kettles
Solid fuel /handy fuel: This fuel is made from
petroleum jelly and comes in small tins .Usage: Used mainly in the F&B
where food is heated up in chafing dishes.
SOLAR ENERGY: Heat from the sun used
as a fuel .not very common fuel used in kitchens. Usage: Solar Cookers utilize
solar energy to cook food.
